If so, make these right now. Well, ok, you can wait until breakfast, or the coming weekend, but you really must try these banana pancakes.
I’d love to be able to show you a picture of the ones I made for breakfast this morning, but I was in such a hurry to eat them. Honestly, I’m glad I only cooked up half of the batter, because I could have eaten the entire batch. Instead, I now have incentive to get up early tomorrow to make them before work. The second best thing about these pancakes (after their seriously delicious taste), is that they are also seriously healthy. The oats provide protein, fibre and manganese, the almonds calcium and fibre plus they can help regulate blood sugar, and the linseed (flaxseed) is a great source of omega-3 (MUCH better than having to eat fish, in my book). And all that is before you add in the bananas, blueberries and strawberries.
My pancakes did fall apart a bit when I tried to flip them, but it made no difference to the taste. What these guys lack in form, the make up for in flavour.
Another food-processor meal I highly recommend, is this butternut mac’n cheese. Completely dairy free (using cashews to make the ‘cheese’ sauce) and the sauce is amazing – even before I added the butternut the smell was calling my name. I made this with corn and rice pasta last night and managed to eat much more than I can with normal pasta (a good thing for me) and at no time during or after did I feel that very heavy and unpleasant feeling in my stomach that usually accompanies pasta. If I’d known this about wheat-free pasta, I would have tried it years ago.
No new crafting things to share. My arm is still giving me trouble and I generally can’t do much with it after a full day at work. Not if I don’t want to be in pain all the next day. I’m still getting it treated though, so hopefully soon I’ll be back to sharing my crafty creations here. In the meantime, you’ll just have to make do with me sharing which recipes I’ve tried that I think you’d like too.
